Tacky Broccoli Soup – Be Good Organics


That is such a beautiful approach to get extra greens into your weight loss program.  Particularly when it’s winter, and also you don’t actually really feel like inexperienced smoothies, juices or salads.  This soup is tremendous easy, actually versatile for no matter veges you may have readily available, and while it might look somewhat “inexperienced” (humorous that), the creaminess of the cashews makes it smack bang scrumptious.

You may substitute different inexperienced or white veges too, corresponding to courgette/zucchini, leeks, cabbage, silverbeet, kale, spinach, peas, potatoes, jerusalem artichokes – no matter you may have readily available.  Simply make sure you embody at the very least one ‘white’ vege for a lovely creamy texture (+ 2 or extra inexperienced veges).

    tbsp
    olive oil
  • 1
    onion
    diced
  • 3
    cloves
    garlic
    chopped
  • 1
    broccoli (together with stems and leaves)
    chopped
  • 1/2
    cauliflower (together with stems and leaves)
    chopped
  • 6
    c
    water
  • 6
    tbsp
    vegetable inventory powder
  • 1/2
    c
    cashews
  • 2
    tbsp
    dietary yeast
  • ¼
    tsp
    dijon mustard
  • 1
    tsp
    sea salt
  • ¼
    tsp
    floor black pepper
  • squeeze
    lemon juice

To Serve

  • grated cheese, , crimson chilli flakes, cracked black pepper

Directions

  1. sauté chopped garlic, onion and coconut oil for two minutes, add chopped celery sauté one other 2 minutes.

  2.  Add chopped cauliflower and broccoli plus vege inventory, pop the lid on and produce to boil then scale back to a simmer for 15-20mins till veges are delicate.

  3. Add herbs, switch combination to blender mix til clean, return to pan.  

  4. Mix cashews and water in blender til they type a clean cream, then add to the pan as effectively. 

  5. Add salt to style, reheat barely, then serve drizzled with hemp seed oil or cashew bitter cream and cracked black pepper.

  • In case you don’t have mint useful, then you can too use 1 tbsp dried dill or different herbs.
  • Make it nut free: use sunflower or watermelon seeds as a substitute of cashews.
