Recipe: The Best Heritage Tomato Salad


Simple salads are the hero of summer time consuming and this one takes benefit of scrumptious Isle of Wight heritage tomatoes. With simply 5 components and three steps to cut, assemble and costume – it is a cinch!

This recipe employs the smacking acidity of pink wine vinegar to convey out the sweetness of the British-grown tomatoes. 

Serve alongside a roast, barbeque or your favorite vegetable grill. 

Components 

  • 1 shallot, finely chopped
  • 2 tablespoons pink wine vinegar
  • 400 g blended heritage tomatoes
  • A small handful of parsley, roughly chopped
  • Salt + freshly floor black pepper 

Methodology: 

  1. Combine the shallot with the pink wine vinegar and remaining olive oil and put aside. 
  2. Roughly slice the tomatoes so that you get plenty of completely different sizes and shapes. Season with salt to attract out the flavour. 
  3. Costume the sliced tomatoes with the shallot & vinegar combination and sprinkle over the roughly chopped parsley
